Gluten-free Blogging

Many of you have asked me what you should be eating. Now, this is a great sign, because it indicates a new awareness that what you eat affects how you feel. I understand that this is not 100% universally true, but it is true for most of us. For me, it’s incredibly clear that wheat gluten, dairy and processed sugar are my enemies. When I stopped eating wheat, my pain symptoms slowly but surely disappeared. I don’t eat dairy products because they irritate my digestive system, and sugar – especially white sugar – affects both my pain and my mood. Given that mood regulation, digestive issues and pain are all Fibro symptoms, I would say that changing my diet has been instrumental in my healing process.

Today I would like to share with you what my current diet looks like. I’m not a meat-eater, and have not been much of one since age 12. I do eat eggs, and rarely, fish. Mostly, though, I eat a plant-based, Mediterranean diet. Here in the Mediterranean, we eat what’s in season and mostly local. So, what, you might ask, do we eat? We eat lentils and chick peas, tofu and tempeh, all kinds of beans. We eat cashews and almonds and hazelnuts, and we make our own cheeses from them. We eat oats and fruit, rice, rice noodles and lots and lots of vegetables. Since we are in the region, we eat tahini and hummus too. We enjoy Indian and Asian cuisines. I put garlic, ginger, cumin and turmeric into everything. In short, we enjoy the food we eat, and we eat food that supports wellness.

The recipe pictured on this page is easy, and happens to be one of my favorites. It’s a hearty, spicy soup full of flavor and nutrients. I added fresh basil and lemongrass to give it a bit more of a Thai flavor. Try it! In fact, try eating differently for a day, a few days, a week. See if you notice any changes. To be honest, I don’t love having a restricted diet. I wish I didn’t have to be so careful. But I do. Luckily, we live in a time of abundance, and there is great, healthy food available to us. If we don’t take care of the planet, this might change. So as much as possible, I try to eat a diet that is sustainable as well as good for me personally. Eat well, and feel better!
